    Prepare the Marinade

    In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Mix well.

    Marinate the Pork

    Cut the pork shoulder into 2-inch cubes and add to the marinade. Toss to coat evenly. Cover and refrigerate for at least 2 hours, preferably overnight.

    Soak Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

    Preheat Grill

    Preheat your grill to medium-high heat.

    Skewer the Pork

    Thread the marinated pork cubes onto the soaked skewers, leaving a little space between each piece.

    Grill the Souvlaki

    Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the pork is cooked through and has nice grill marks.

    Serve

    Serve the grilled pork souvlaki with warm pita bread, tzatziki sauce, and a sprinkle of chopped parsley.
