Marinate the Meat
In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, cumin, coriander, salt, and pepper. Add the pork shoulder (or chicken thighs) and coat well. Cover and refrigerate for at least 2 hours or overnight for best flavor.

Prepare the Rotisserie
Preheat your rotisserie machine according to the manufacturer’s instructions.

Cook the Meat
Place the marinated meat onto the rotisserie spit and secure it. Cook the meat in the rotisserie for about 2-3 hours, or until fully cooked and tender. Rotate the spit regularly for even cooking.

Prepare the Pitas
While the meat is cooking, warm the pita bread in a skillet or wrap them in foil and place in the oven for a few minutes until soft.

Assemble the Gyros
Once the meat is cooked, carefully slice it off the spit. Take a warmed pita, add slices of the cooked meat, top with tzatziki sauce, and add fresh vegetables. Wrap or fold the pita and serve immediately.
