Burger Patty Preparation

    Prepare the Quinoa

    In a pot, combine 1 cup of rinsed red quinoa with 2 cups of water. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes until the quinoa is fluffy and water is absorbed. Set aside to cool.

    Sauté Vegetables

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes. Add the diced beets and chopped mushrooms, cooking for an additional 5-7 minutes until mushrooms are tender. Remove from heat and let cool.

    Mix the Patty Ingredients

    In a large bowl, combine the cooked quinoa, sautéed vegetables, beaten egg, bread crumbs, salt, and black pepper. Mix until well combined.

    Shape the Patties

    Form the mixture into 4 equal patties. If the mixture is too wet, add more bread crumbs as necessary.

    Cook the Patties

    Heat a skillet or grill over medium heat and add a little olive oil. Cook the patties for about 5-6 minutes on each side or until golden brown and heated through.

Olive Aioli Preparation

    Make the Aioli

    In a bowl, combine 1 cup of mayonnaise, 1 cup of chopped black olives, minced garlic, lemon juice, and salt. Mix until smooth. Adjust seasoning to taste.

Sweet Potato Fries Preparation

    Prepare the Fries

    Preheat the oven to 425°F (220°C). Toss the sweet potato fries in a bowl with 2 tablespoons of olive oil, salt, and paprika until evenly coated.

    Bake the Fries

    Spread the fries on a baking sheet in a single layer and bake for 25-30 minutes, flipping halfway through, until crispy and golden.

Assembly

    Assemble the Burger

    On a pretzel bun, place a cooked beet and quinoa patty. Top with crumbled goat cheese and a generous handful of mixed greens. Spread black olive aioli on the top half of the bun and close the burger.

    Serve

    Serve the burgers hot alongside the sweet potato fries.
