For the Griddle Cakes

    Prepare the Batter

    In a large mixing bowl, combine the all-purpose flour, baking powder, sugar, and salt. Mix well.

    Mix Wet Ingredients

    In another bowl, whisk together the milk, eggs, and vanilla extract. Add the melted butter and mix until fully combined.

    Combine Wet and Dry Ingredients

    Pour the wet mixture into the dry ingredients. Stir just until combined; do not overmix. Let the batter rest for 5 minutes.

    Cook the Cakes

    Preheat a griddle or non-stick skillet over medium heat. Lightly grease with butter. Pour about 1/4 cup of batter onto the griddle for each cake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.

    In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined and fluffy.

    Once the griddle cakes are cooked, place a dollop of the cream cheese filling between two cakes. Top with a generous amount of whipped cream, sliced strawberries, blueberries, and banana slices.
