    Cook the Eggs

    In a non-stick skillet over medium heat, crack the two eggs. Cook for about 2-3 minutes for sunny-side up, or flip them to cook for an additional 1-2 minutes for over-easy. Season with salt and pepper to taste before serving.

    Cook the Meat

    Choose either bacon, pork sausage, or chicken sausage. For bacon, cook in a skillet over medium heat for about 4-6 minutes until crispy. For pork or chicken sausage, cook in the same skillet for about 6-8 minutes, turning occasionally, until browned and cooked through.

    Prepare the Home Fries

    Peel and dice the potatoes into small cubes. Finely chop the onion. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes and onions, season with salt and pepper, and cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden brown and tender.

    While the home fries are cooking, toast the two slices of sourdough bread to your desired level of crispiness. Once toasted, spread 1 tablespoon of butter on the hot bread.
