    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into evenly sized sticks, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and makes the fries crispier.

Frying

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

    Fry the Potatoes (First Fry)

    Carefully add the dried potato sticks to the hot oil in batches, making sure not to overcrowd the pot. Fry for about 4-5 minutes, or until the fries are soft but not browned. Remove from the oil and drain on paper towels.

    Fry the Potatoes (Second Fry)

    Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for an additional 2-3 minutes until golden brown and crispy. Remove and drain on paper towels again.

Finishing Touches

    Season the Fries

    While the fries are still hot, drizzle with truffle oil and sprinkle with truffle salt. Toss to evenly coat the fries.

    Serve

    Transfer the truffle pommes frites to a serving dish and enjoy immediately.
