Method

Burger Preparation

  1. 1

    Prepare the Patties

In a mixing bowl, shape the Lawson Farms grass-fed ground beef into two equal-sized patties. Season each patty with salt and black pepper to taste.

  2. 2

    Cook the Patties

Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side or until they reach your desired doneness. Add a slice of smoked gouda cheese on top of each patty during the last minute of cooking to melt.

  3. 3

    Prepare the Vegetables

While the patties are cooking, slice the tomato and onion into thin rounds. Wash and dry the lettuce leaf.

  4. 4

    Assemble the Burger

Toast the burger buns lightly on the grill or in a toaster. Place the cooked patty with melted gouda on the bottom half of the bun. Layer with sliced tomato, onion, and lettuce. Top with the other half of the bun.

Side Preparation

  1. 5

    Prepare the Potatoes

Preheat your oven to 425°F (220°C). Wash and chop the local heirloom potatoes into wedges. In a bowl, toss the potato wedges with olive oil, salt, and black pepper.

  2. 6

    Roast the Potatoes

Spread the seasoned potato wedges on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until golden brown and crispy, flipping halfway through.

Roasted Garlic Aioli Preparation

  1. 7

    Roast the Garlic

Preheat your oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil and roast in the oven for about 20-25 minutes, or until soft and fragrant.

  2. 8

    Make the Aioli

Once the garlic is roasted, let it cool slightly. Squeeze the soft garlic cloves into a bowl, then mix with mayonnaise, lemon juice, salt, and black pepper. Adjust seasoning to taste.
