Preparation of Ingredients

    Caramelize the Onions

    Peel and slice the onions thinly. Heat a tablespoon of olive oil in a pan over medium heat. Add the onions and cook slowly, stirring occasionally, until they are soft and golden brown, about 20-25 minutes.

    Roast the Tomatoes

    Preheat your oven to 400°F (200°C). Cut the tomatoes in half and place them on a baking sheet. Drizzle with olive oil, season with salt, and roast for about 20 minutes or until tender.

    Prepare the Pommes Frites

    Peel and cut the potatoes into thin strips. Soak them in cold water for at least 30 minutes to remove excess starch. Drain and dry the potatoes thoroughly. Toss them with olive oil and salt.

Cooking

    Fry the Pommes Frites

    Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until they are golden and crispy, about 5-6 minutes. Remove and drain on paper towels.

    Crisp the Prosciutto

    While the fries are cooking, place the prosciutto in a dry skillet over medium heat. Cook for 2-3 minutes on each side until crispy. Remove and let it cool on paper towels.

Assembly

    Assemble the Dish

    On a serving plate, layer the mixed greens. Top with caramelized onions, roasted tomatoes, crispy prosciutto, sweet pickled peppers, and chunks of Taleggio cheese. Drizzle with balsamic glaze. Serve with pommes frites on the side.
