Sweet Potato Fries

    Prep the Sweet Potatoes

    Preheat your oven to 425°F (220°C). Wash and peel the sweet potatoes. Cut them into evenly sized strips, about 1/4 inch thick.

    Season the Fries

    In a large bowl, toss the sweet potato strips with olive oil, salt, black pepper, paprika, and garlic powder until they are well coated.

    Bake the Fries

    Spread the seasoned sweet potato strips in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until they are crispy and golden brown.

Smoked Pineapple Sauce

    Prepare the Pineapple

    If using fresh pineapple, peel, core, and chop it into small pieces. If using canned pineapple, drain the juice.

    Cook the Sauce

    In a saucepan over medium heat, combine the pineapple, smoked paprika, brown sugar, lime juice, chili powder, and salt. Cook for about 10-15 minutes until the mixture thickens, stirring occasionally.

    Blend the Sauce

    Remove the sauce from heat and let it cool slightly. Blend it in a blender or food processor until smooth. Adjust seasoning if necessary.
