    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thick strips, about 1/2 inch wide.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Drain the soaked potatoes and pat them dry with paper towels. Fry the potatoes in batches, avoiding overcrowding, for about 5-6 minutes until golden and crispy. Remove and drain on paper towels.

    Season the Fries

    While the fries are still hot, drizzle with truffle oil, and sprinkle with salt, black pepper, and chopped fresh parsley. Toss gently to combine.

Truffle Aioli

    Prepare the Aioli

    In a small bowl, combine the mayonnaise, minced garlic (finely chop the garlic cloves), lemon juice, truffle oil, and salt.

    Mix Well

    Whisk all the ingredients together until smooth and well combined. Adjust seasoning as needed.

    Chill the Aioli

    Cover the aioli and refrigerate for at least 30 minutes to allow the flavors to meld.
