Method

Braised Short Ribs

    Prepare the Short Ribs

    Preheat your oven to 150°C (300°F). Season the short ribs with salt, black pepper, and smoked paprika.

    Sear the Ribs

    In a large oven-safe pot, heat the olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side.

    Add Aromatics

    Add chopped onion and minced garlic to the pot. Sauté for 2-3 minutes until they become fragrant.

    Braise the Ribs

    Pour in the beef broth and add the bay leaf. Bring to a simmer, cover the pot, and transfer it to the oven. Cook for 3 hours or until the meat is tender and falls off the bone.

    Shred the Meat

    Remove the pot from the oven and let the ribs cool slightly. Discard the bay leaf, then shred the meat using two forks.

Guacamole

    Prepare the Avocados

    In a bowl, mash the ripe avocados with a fork until smooth but still slightly chunky.

    Mix Ingredients

    Add lime juice, chopped cilantro, diced tomato, salt, and garlic powder to the mashed avocado. Mix well until combined.

Pico de Gallo

    Chop Ingredients

    Dice the tomatoes and red onion, and chop the cilantro.

    Combine Ingredients

    In a bowl, mix together the diced tomatoes, red onion, cilantro, lime juice, and salt. Stir until well combined.

Black Bean Puree

    Blend Ingredients

    In a blender or food processor, combine the canned black beans, minced garlic, cumin, olive oil, and salt.

    Puree the Mixture

    Blend until smooth. If the mixture is too thick, add a little water to reach the desired consistency.

Assemble Nachos

    Layer the Chips

    On a large serving platter, spread out the potato chips evenly.

    Add Toppings

    Top the chips with shredded short ribs, black bean puree, and cheese dip. Sprinkle Monterrey Jack cheese on top.

    Melt the Cheese

    Place the platter in a preheated oven at 180°C (350°F) for about 5-7 minutes or until the cheese is melted.

    Finish with Fresh Toppings

    Remove from oven and top with guacamole, pico de gallo, pickled jalapeños, and a dollop of sour cream.
