Braised Short Ribs

    Sear the Ribs

    In a large pot, heat olive oil over medium-high heat. Season the short ribs with salt and pepper, then sear them in the pot until browned on all sides, about 8-10 minutes. Remove the ribs and set aside.

    Sauté Aromatics

    In the same pot, add chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent.

    Braise the Ribs

    Return the short ribs to the pot. Add beef broth, soy sauce, brown sugar, and thyme. Bring to a simmer, cover, and reduce heat to low. Cook for 2.5 to 3 hours until the ribs are tender.

    Shred the Meat

    Once cooked, remove the ribs from the pot and shred the meat using two forks. Discard bones and excess fat.

Caramelized Onions

    Cook the Onions

    In a skillet, melt butter over medium heat. Add sliced onions and salt. Cook, stirring occasionally, until the onions are browned and caramelized, about 20-25 minutes.

Grilled Cheese Assembly

    Prepare the Sandwiches

    On a slice of brioche bread, layer shredded Gruyere cheese, shredded provolone cheese, shredded short rib meat, and caramelized onions. Top with another slice of brioche.

    Grill the Sandwiches

    In a skillet, heat 1 tablespoon of butter over medium heat. Place the prepared sandwich in the skillet and grill until golden brown, about 3-4 minutes per side, adding more butter as needed.

    Serve

    Once both sides are golden and the cheese is melted, remove from the skillet, cut in half, and serve hot.
