Preparing the Sazerac Rye

   Chill the Glass

   Start by chilling an old-fashioned glass. You can do this by filling it with ice water and letting it sit while you prepare the cocktail.

   Rinse the Glass

   Once the glass is chilled, discard the ice water. Pour in the absinthe and swirl it around to coat the interior of the glass. Discard any excess absinthe.

   Mix the Ingredients

   In a mixing glass, combine the Sazerac Rye whiskey, simple syrup, and Peychaud's bitters. Fill the mixing glass with ice.

   Stir the Mixture

   Stir the mixture well for about 30 seconds until it's properly chilled and diluted.

   Strain and Serve

   Strain the mixture into the prepared glass. Do not add ice; it should be served neat.

   Garnish

   Twist the lemon peel over the drink to release its oils, then drop it into the cocktail as a garnish.
