Method

Preparing the Broth

  1. 1

    Combine Base Ingredients

In a medium saucepan, combine 1 cup of soy sauce, 1 cup of water, and 2 tablespoons of sesame oil. Stir well to mix.

  2. 2

    Heat the Broth

Place the saucepan over medium heat and bring the mixture to a gentle simmer. Do not boil.

Adding Flavor

  1. 3

    Chop Vegetables

While the broth is heating, finely chop 2 stalks of green onion, 1 whole jalapeño (remove seeds for less heat if desired), and 2 cloves of garlic.

  2. 4

    Incorporate Flavor Additions

Once the broth is simmering, add the chopped green onion, jalapeño, and garlic to the saucepan. Stir to combine.

  3. 5

    Add Chili Paste

Stir in 1 tablespoon of chili paste into the broth and mix well.

Sweetening the Broth

  1. 6

    Add Sweetener

Add 1 tablespoon of honey or sugar to the broth. Stir until fully dissolved and let it simmer for an additional 5 minutes.

Final Touches

  1. 7

    Taste and Adjust

Taste the ponzu broth and adjust seasoning if necessary, adding more soy sauce or honey to achieve your desired balance of sweet and spicy.

  2. 8

    Serve

Remove the broth from heat and serve warm as a dipping sauce or broth for your favorite Asian dishes.
