Mashing

Prepare the Mash
In a large mash tun, combine the corn, rye, and barley. Add 12 liters of distilled water to the grains and heat to 150°F (65°C). Stir well and maintain the temperature for 1 hour.

Cool the Mash
After 1 hour, cool the mash to about 70°F (21°C) by transferring it to a fermentation vessel.
Fermentation

Add Yeast
Once the mash has cooled, add 0.5 cup of yeast to the mixture. Stir gently to combine.

Ferment the Mixture
Seal the fermentation vessel and let it sit at room temperature for 5 to 7 days. Check for bubbles in the airlock to ensure fermentation is occurring.
Distillation

Distill the Wash
Once fermentation is complete, transfer the wash to a still. Heat the still slowly and collect the distillate until you reach the desired proof of 114.3.
Aging

Age the Whiskey
Pour the distilled whiskey into oak barrels and seal them tightly. Store in a cool, dark place for at least 2 years to develop flavor.
