Mussels Preparation

Clean the Mussels
Rinse the mussels under cold water, scrubbing the shells with a brush. Remove any beards (the fibrous strands) using your fingers.

Add Wine and Mussels
Pour in the white wine and bring to a simmer. Add the cleaned mussels, cover the pot, and cook for about 5-7 minutes, shaking the pot occasionally until mussels have opened.

Finish with Seasoning
Remove from heat, and stir in chopped parsley, lemon juice, salt, and black pepper. Discard any mussels that did not open.
House Pomme Frites Preparation

Prepare the Potatoes
Peel the potatoes and cut them into thin strips (about 1/4 inch thick). Rinse in cold water and pat dry with paper towels.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the potato strips in small batches to the hot oil and fry until golden brown and crispy, about 4-5 minutes. Use a slotted spoon to remove and drain on paper towels.

Season the Fries
While still hot, sprinkle the fries with salt to taste.
Serving the Dish

Plate the Mussels
Serve the mussels in a large bowl, garnished with additional parsley if desired.

Accompany the mussels with a side of house pomme frites and slices of local artisan bread.
