Prepare the Mushroom Filling

    Sauté Vegetables

    Heat olive oil in a large skillet over medium heat. Add sliced onion and bell pepper, sauté until soft and caramelized, about 8-10 minutes.

    Cook Mushrooms

    Add the chopped royal trumpet, shiitake, and oyster mushrooms to the skillet. Season with salt and black pepper. Cook until the mushrooms are tender and browned, about 5-7 minutes.

Assemble the Sandwich

    Prepare Baguette

    Cut the French baguette in half lengthwise. If desired, lightly toast the inside under the broiler for 1-2 minutes until golden.

    Add Filling and Cheese

    Fill each half of the baguette with the sautéed mushroom and vegetable mixture. Top generously with shredded Monterey Jack cheese.

    Melt the Cheese

    Place the assembled baguette halves on a baking sheet and put them under the broiler for 2-3 minutes until the cheese is melted and bubbly. Keep a close eye to avoid burning.

Serve

    Slice and Serve

    Remove from the oven, let cool for a minute, then slice the baguette into individual servings. Serve warm.
