Cook the Ground Beef
In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, sautéing until soft and fragrant, about 3-5 minutes.

Add Beef and Seasoning
Add ground beef to the skillet. Cook until browned, breaking it apart with a spoon, about 7-10 minutes. Stir in cumin, chili powder, salt, and black pepper. Cook for another 2-3 minutes until well combined.

Mix in Cheese and Peppers
Remove the skillet from heat and stir in cotija cheese and pickled sweet peppers until evenly mixed.

Prepare Black Bean Puree
In a blender, puree cooked black beans until smooth. Add water if necessary to reach desired consistency. Season with salt to taste.
Assembling the Taquitos

Warm Tortillas
In a separate skillet, warm corn tortillas over medium heat for about 30 seconds on each side until pliable.

Fill and Roll Tortillas
Place 2-3 tablespoons of the beef mixture on one side of each tortilla. Roll tightly and place seam-side down on a baking sheet.

Bake the Taquitos
Preheat the oven to 400°F (200°C). Bake taquitos for 15-20 minutes or until golden and crispy.

Serve hot with black bean puree, sour cream, and sprinkle with fresh cilantro on top.
