    Wash and Prep Potatoes

    Thoroughly wash the fingerling potatoes under cold water to remove any dirt. Pat them dry with a paper towel.

    Cut Potatoes

    Slice the fingerling potatoes in half lengthwise to create flat surfaces for better searing.

Cooking

    Preheat the Pan

    In a large skillet, heat the duck fat over medium heat until it melts and starts to shimmer.

    Sear the Potatoes

    Place the halved fingerling potatoes cut-side down in the skillet. Sprinkle with salt and black pepper. Cook for about 5-7 minutes until they are golden brown and crispy.

    Add Herbs

    Once the potatoes are seared, flip them over and add the chopped rosemary and thyme to the skillet. Cook for an additional 5-7 minutes, stirring occasionally, until the potatoes are tender and the herbs are fragrant.

    Serve

    Remove the potatoes from the skillet and transfer them to a serving dish. Adjust seasoning with additional salt and pepper if necessary. Serve warm.
