Preparation of Dates

    Roast Garlic

    Preheat your oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil with a drizzle of olive oil. Roast for 30-35 minutes until soft and fragrant. Allow to cool, then squeeze the garlic out of the skins into a bowl.

    Stuff Dates

    Carefully slice each Medjool date lengthwise and remove the pit. In a bowl, mix the roasted garlic with goat cheese until well combined. Stuff each date with the goat cheese and garlic mixture.

Wrapping and Cooking Dates

    Wrap in Bacon

    Wrap each stuffed date with a slice of smoked bacon, securing the ends with toothpicks if necessary. Place the wrapped dates seam side down on a baking sheet lined with parchment paper.

    Bake

    Bake the bacon-wrapped dates in the preheated oven at 400°F (200°C) for 15-20 minutes, or until the bacon is crispy and golden brown. Turn them halfway through for even cooking.

Preparing Smoked Honey

    Mix Smoked Honey

    In a small bowl, combine honey and liquid smoke. Stir well to combine and set aside.

Making Tomato Sauce

    Cook Tomato Sauce

    In a saucepan over medium heat, add olive oil and sauté the chopped onion until translucent (about 5 minutes). Add minced garlic and cook for an additional minute. Stir in the canned crushed tomatoes, salt, pepper, and dried basil. Simmer for 10-15 minutes to let flavors meld.

Serving

    Plate and Serve

    Once the bacon-wrapped dates are done, remove them from the oven and let them cool slightly. Serve warm drizzled with smoked honey and alongside the tomato sauce for dipping.
