Burger Patty Preparation

Prepare the Meat Mixture
In a large bowl, combine the Black Angus ground beef and finely chopped Spanish cured chorizo. Season with salt and black pepper.

Form the Patties
Mix the meat mixture thoroughly and form into two equal patties. Make a small indentation in the center of each patty to ensure even cooking.

Add Cheese
In the last minute of cooking, place a slice of Manchego cheese on each patty and cover the skillet until melted.

Crisp the Serrano Ham
In the same skillet, add the slices of Serrano ham and cook until crispy. Remove and set aside.

Prepare the Potatoes
Peel and cut the large potatoes into bite-sized pieces. Boil in salted water for about 10 minutes or until slightly tender.

Prepare the Fries
Cut the remaining large potatoes into thin strips. Soak in cold water for at least 30 minutes to remove excess starch.

Fry the Potatoes
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 3-5 minutes. Drain on paper towels and season with salt.
