Method

Burger Patty Preparation

  1. 1

    Prepare the Meat Mixture

In a large bowl, combine the Black Angus ground beef and finely chopped Spanish cured chorizo. Season with salt and black pepper.

  2. 2

    Form the Patties

Mix the meat mixture thoroughly and form into two equal patties. Make a small indentation in the center of each patty to ensure even cooking.

  3. 3

    Cook the Patties

Heat olive oil in a skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they reach your desired doneness.

  4. 4

    Add Cheese

In the last minute of cooking, place a slice of Manchego cheese on each patty and cover the skillet until melted.

Toppings Preparation

  1. 5

    Crisp the Serrano Ham

In the same skillet, add the slices of Serrano ham and cook until crispy. Remove and set aside.

  2. 6

    Prepare the Vegetables

Prepare oven-roasted tomatoes and caramelized onions by either using pre-made or roasting onions until golden brown and tomatoes until soft.

Crispy Potatoes Preparation

  1. 7

    Prepare the Potatoes

Peel and cut the large potatoes into bite-sized pieces. Boil in salted water for about 10 minutes or until slightly tender.

  2. 8

    Crisp the Potatoes

Drain and pat dry the potatoes. Toss with olive oil and salt, and roast in the oven at 425°F (220°C) for 20-25 minutes until golden and crispy.

Pommes Frites Preparation

  1. 9

    Prepare the Fries

Cut the remaining large potatoes into thin strips. Soak in cold water for at least 30 minutes to remove excess starch.

  2. 10

    Fry the Potatoes

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 3-5 minutes. Drain on paper towels and season with salt.

Assemble the Burger

  1. 11

    Build the Burger

On a toasted bun, layer the cooked chorizo burger patty with crispy Serrano ham, house mixed greens, oven-roasted tomatoes, and caramelized onions.

  2. 12

    Serve

Serve the burger with a side of crispy potatoes and pommes frites.
