Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.

Combine Both Mixtures
Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix as this can make the pancakes tough.

Add Cheese and Vegetables
Fold in the crumbled blue cheese, sautéed vegetables, and cooked pancetta to the batter. Season with black pepper to taste.

Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, approximately 3-4 minutes. Flip and cook for another 2-3 minutes until golden brown.

Serve
Serve the pancakes warm, garnished with additional crumbled blue cheese and a drizzle of your favorite maple syrup if desired.
