Method

Beef Sliders

  1. 1

    Prepare the Beef Patties

In a large bowl, combine the ground Black Angus beef with salt and black pepper. Mix gently and form into 4 equal-sized patties.

  2. 2

    Cook the Patties

Heat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side for medium doneness. During the last minute of cooking, place a slice of Gruyère cheese on each patty to melt.

  3. 3

    Toast the Buns

While the patties are cooking, lightly toast the brioche buns on the grill or in a toaster until golden brown.

Oven-Roasted Tomatoes

  1. 4

    Prepare the Tomatoes

Preheat the oven to 400°F (200°C). In a mixing bowl, toss the cherry tomatoes with olive oil, balsamic vinegar, salt, and black pepper.

  2. 5

    Roast the Tomatoes

Spread the tomatoes on a baking sheet in a single layer and roast in the preheated oven for 20-25 minutes, until they are soft and slightly caramelized.

Caramelized Onions

  1. 6

    Slice the Onions

    Thinly slice the yellow onion.

  2. 7

    Cook the Onions

In a skillet, heat the butter and olive oil over medium heat. Add the sliced onions, salt, and sugar. Cook, stirring occasionally, for about 20-25 minutes until the onions are soft and caramelized.

House-Made Potato Chips

  1. 8

    Prepare the Potatoes

Wash and thinly slice the russet potatoes using a mandoline or sharp knife.

  2. 9

    Fry the Chips

In a large pot, heat the vegetable oil over medium-high heat. Once hot, carefully add a handful of potato slices and fry until golden brown, about 3-5 minutes. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt to taste.
