Focaccia Dough
Method
Preparation
- 1
Prepare the Dough
In a large bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy. Add the olive oil, salt, and flour, mixing until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth.
- 2
First Rise
Place the kneaded dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
- 3
Prepare Toppings
While the dough is rising, prepare the toppings by slicing the black olives, cherry tomatoes, onion, and cremini mushrooms. Crumble the feta cheese and chop the rosemary.
- 4
Assemble the Focaccia
Preheat the oven to 425°F (220°C). Once the dough has risen, punch it down and spread it onto a greased baking tray. Use your fingers to create dimples in the dough. Evenly distribute the prepared toppings over the surface.
- 5
Second Rise
Cover the assembled focaccia with a cloth and let it rise for another 20 minutes.
- 6
Bake
Sprinkle sea salt and black pepper over the top. Bake in the preheated oven for 20-25 minutes or until golden brown.
- 7
Serve
Allow to cool slightly before slicing. Serve warm as an appetizer or side dish.
