    Prepare the Sauce

    In a large skillet, heat the guanciale over medium heat. Cook until it is crispy and has rendered its fat.

    Add Onion

    Add the chopped onion to the skillet and sauté until translucent, about 5 minutes.

    Cook Tomatoes

    Add the San Marzano tomatoes and chili flakes to the skillet. Season with salt and pepper. Simmer for about 15-20 minutes, stirring occasionally.

    Cook Pici

    In a separate pot, cook the pici pasta in salted boiling water according to package instructions until al dente.

    Combine

    Once the pasta is cooked, reserve some pasta water and drain the rest. Add the pasta to the sauce and toss to combine. If the sauce is too thick, add reserved pasta water as needed.

    Serve

    Plate the pasta and sprinkle with grated Parmigiano Reggiano before serving. Enjoy!
