    Make the Pinsa Dough

    In a large bowl, combine the all-purpose flour, bread flour, salt, and yeast. Gradually add warm water and olive oil. Mix until a dough forms.

    Knead the Dough

    Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1-2 hours until doubled in size.

    Preheat the Oven

    Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat.

    Shape the Pinsa

    Once the dough has risen, turn it out onto a floured surface. Shape it into a rectangle or oval about 1/2 inch thick.

    Add Toppings

    Spread the tomato sauce evenly over the dough, then sprinkle mozzarella, taleggio, and gorgonzola cheeses. Top with roasted peppers or artichokes and drizzle with agrodolce.

    Bake

    Transfer the pinsa onto the preheated pizza stone or a baking sheet and bake for 12-15 minutes or until the cheese is bubbly and golden.

    Remove from the oven, let cool for a few minutes, slice, and serve warm.
