Instructions for Making Grappa
1. Preparing the Grapes
Wash the grapes thoroughly and crush them to release the juice. Collect the pomace (the solid remains) for distillation.
2. Fermentation
In a fermentation vessel, combine the crushed grapes, pomace, water, and yeast. If using, add sugar to the mixture. Cover with a cloth and let it ferment in a cool, dark place for 1 to 2 weeks, stirring occasionally.
3. Distillation
Once fermentation is complete, transfer the mixture into a still. Heat slowly to allow the alcohol to evaporate and condense into liquid form. Collect the distillate in separate containers.
4. Aging (optional)
For a smoother taste, let the grappa age in oak barrels for several months. Otherwise, it can be bottled immediately.
5. Bottling
Once distilled and aged (if applicable), bottle the grappa in clean, sterilized bottles. Seal tightly and store in a cool, dark place.
