    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Wash and cut the potatoes into wedges. Toss with olive oil, salt, black pepper, and rosemary. Spread on a baking sheet and roast for 25-30 minutes until golden and crispy.

    Cook the Vegetables

    In a large skillet, heat a tablespoon of butter over medium heat. Add the seasonal vegetables, season with salt and pepper, and sauté for about 5-7 minutes until tender. Remove from skillet and set aside.

    Prepare the Fish

    In the same skillet, add the remaining butter. Once melted, add the thyme and lemon juice, then place the fish fillets in the skillet. Cook for about 3-4 minutes on each side until the fish is cooked through and flakes easily.

    Add Wine

    Pour the white wine into the skillet with the fish. Let it simmer for an additional 2-3 minutes to enhance the flavors.

    Serve

    Plate the roasted potatoes and sautéed vegetables alongside the fish. Drizzle any remaining citrus butter sauce over the top and enjoy!
