Preparation and Assembly

Prepare the Pinsa Dough
In a large bowl, dissolve the yeast in warm water. Add flour, salt, and olive oil. Mix until a dough forms. Knead for about 5-7 minutes until smooth. Cover and let rise for 1 hour.

Make the San Marzano Sauce
In a blender, puree the San Marzano tomatoes until smooth. Season with salt and pepper to taste.

Preheat the Oven
Preheat your oven to 475°F (245°C) or use a pizza stone if available.

Shape the Pinsa
On a floured surface, stretch the dough into an oval shape. Transfer to a baking sheet or pizza stone.

Add Sauce and Cheese
Spread the San Marzano sauce evenly over the dough and tear the mozzarella into pieces, scattering them on top.

Bake the Pinsa
Bake in the preheated oven for about 10-12 minutes until the crust is golden and the cheese is bubbling.

Prepare the Organic Egg
While the pinsa is baking, cook the organic eggs to your desired level (poached or fried). Season with salt and pepper.
