    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Cut the potatoes into wedges and place them in a bowl. Add olive oil, rosemary, minced garlic, salt, and pepper. Toss to coat evenly.

    Roast the Potatoes

    Spread the potato wedges on a baking sheet and roast in the preheated oven for about 30-35 minutes, or until golden brown and crispy, turning halfway through.

    Prepare the Vegetables

    While the potatoes are roasting, wash and cut seasonal vegetables into bite-sized pieces. Heat a skillet over medium heat and add 1 tablespoon of olive oil. Sauté the vegetables for about 5-7 minutes until tender. Season with salt and pepper, and remove from heat.

    Cook the Steak

    Season both sides of the ribeye steaks with salt and black pepper. In a large skillet or grill pan, heat the remaining tablespoon of olive oil over high heat. Add the steaks and cook for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Add butter during the last minute of cooking and spoon it over the steaks.

    Serve

    Remove the steaks from the skillet and let them rest for a few minutes. Serve the ribeye steak alongside the roasted rosemary potatoes and sautéed seasonal vegetables.
