Cooking Instructions
- 1
Prepare the Chicken
Preheat the oven to 375°F (190°C). Pat the chicken dry with paper towels and place it in a roasting pan.
- 2
Season the Chicken
In a small bowl, mix together the olive oil, minced garlic, rosemary, salt, and black pepper. Rub this mixture all over the chicken, ensuring it's well coated.
- 3
Roast the Chicken
Pour the chicken stock into the bottom of the roasting pan. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste the chicken with the juices every 20 minutes.
- 4
Prepare the Vegetables and Potatoes
While the chicken is roasting, prepare your vegetable of the day and roasted potatoes according to your preferred method.
- 5
Serve
Once the chicken is done, let it rest for 10 minutes before carving. Serve with chicken au jus, your vegetable of the day, and roasted potatoes.
