Preparation Steps

    Prepare the Sabayon

    In a heatproof bowl, whisk the egg yolks and granulated sugar together. Place the bowl over a pot of simmering water (double boiler) and whisk constantly until the mixture thickens and doubles in volume. Remove from heat and let it cool slightly.

    Combine with Mascarpone

    Once the sabayon has cooled, gently fold in the mascarpone cheese and vanilla extract until smooth and well combined.

    Prepare the Coffee Mixture

    In a shallow dish, pour the cooled strong brewed coffee. You may add a little sugar or coffee liqueur to taste if desired.

    Assemble the Tiramisu

    Quickly dip each ladyfinger into the coffee mixture, making sure not to soak them. Layer half of the dipped ladyfingers in the bottom of a serving dish. Spread half of the mascarpone mixture over the ladyfingers. Repeat with the remaining ladyfingers and mascarpone.

    Chill and Serve

    Dust the top layer with cocoa powder. Cover and refrigerate for at least 4 hours, or overnight for best results. Serve chilled.
