Cannoli Shells

    Make the Cannoli Shells

    In a mixing bowl, combine flour, sugar, cocoa powder, and salt. Mix well. Add egg yolk and white wine (or vinegar), and mix until dough forms. Knead on a floured surface until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Roll out the Dough

    After resting, roll out the dough thinly (about 1/8 inch thick). Cut into circles using a round cutter about 4 inches in diameter.

    Shape the Shells

    Wrap each dough circle around a cannoli tube, sealing the edges with a bit of water. Make sure the seam is on the bottom.

    Fry the Shells

    Heat oil in a deep fryer or heavy pot to 350°F (175°C). Carefully fry the shells for about 2-3 minutes or until golden brown. Remove and drain on paper towels. Let cool before removing from the tubes.

    Make the Filling

    In a mixing bowl, combine the ricotta, powdered sugar, and vanilla extract. Mix until smooth. Fold in the chocolate chips.

    Fill the Shells

    Using a pastry bag or a spoon, fill the cooled cannoli shells with the ricotta filling.

    Serve

    Dust with powdered sugar before serving. Enjoy your homemade cannoli!
