    Cook the Rice

    In a medium saucepan, bring 3 cups of water to a boil. Add the Arborio rice and a pinch of salt, reduce to a simmer, cover, and cook for about 18-20 minutes until the rice is tender. Remove from heat and let it cool.

    Prepare the Filling

    Once the rice has cooled, mix in the Taleggio cheese and a pinch of black pepper. Set aside.

    Form the Balls

    Take a small portion of the rice mixture and flatten it in your palm. Place a spoonful of Bolognese sauce in the center and mold the rice around it to form a ball. Repeat with the remaining mixture.

    Prepare for Frying

    Set up a breading station with one plate for flour, one for beaten egg, and one for breadcrumbs. Roll each rice ball in flour, then dip in beaten egg, and finally coat with breadcrumbs.

    Fry the Arancini

    In a deep pot, heat the vegetable oil over medium-high heat. Carefully add the rice balls in batches, frying until golden brown and crispy, about 3-4 minutes per batch. Remove and drain on paper towels.

    Serve the arancini warm with house salsa on the side for dipping.
