Cook the Bacon
In a large skillet, cook the hickory smoked bacon over medium heat until crispy, about 6-8 minutes. Turn occasionally for even cooking. Once cooked, drain on paper towels.

Prepare the Vegetables
While the bacon is cooking, wash and dry the lettuce leaves. Slice the tomato and red onion thinly.

Toast the Bread
Toast the slices of bread until golden brown. This adds a nice crunch and helps hold the ingredients together.
Assembly

Spread Mayonnaise
Spread 1 tablespoon of mayonnaise on one side of each slice of toasted bread.

Layer the Ingredients
On two slices of bread (mayonnaise side up), layer the crispy bacon, cheddar cheese, lettuce, tomato slices, and red onion slices.

Top and Serve
Place the other slices of bread on top, mayonnaise side down. Cut the sandwiches in half if desired, and serve immediately.
