Pimento Cheese Preparation

Make the Pimento Cheese
In a medium mixing bowl, combine sharp cheddar cheese, cream cheese, mayonnaise, diced pimentos, hot sauce, garlic powder, salt, and black pepper. Mix until all ingredients are well incorporated and smooth. Adjust seasoning to taste. Refrigerate until ready to use.

Fry the Pickles
In the same skillet, add oil as needed for frying. Heat the oil over medium heat. Once hot, carefully add the pickle slices and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Cook the Burger Patties
Form the ground beef into 4 equal patties, season with salt and pepper. In the same skillet, cook the patties over medium-high heat for about 4-5 minutes on each side for medium doneness, or until they reach your desired level of doneness.

Assemble the Burger
Toast the burger buns lightly if desired. On the bottom half of each bun, spread a generous amount of the house-made pimento cheese. Place a cooked burger patty on top, followed by crispy bacon, fried pickles, a leaf of lettuce, and a slice of tomato. Top with the other half of the bun.

Serve
Serve the burgers immediately with your choice of sides.
