Method
Preparation of Shrimp

Prepare the Shrimp
In a large bowl, combine the peeled and deveined shrimp with salt and black pepper. Let it marinate for about 15 minutes.

Make the Battering Mixture
In another bowl, whisk together the flour and cornstarch. In a separate bowl, beat the eggs. Set aside.
Frying the Shrimp

Heat the Oil
In a deep frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

Batter the Shrimp
Dip each shrimp first into the egg mixture, allowing excess to drip off, then coat it in the flour and cornstarch mixture.

Fry the Shrimp
Carefully place the battered shrimp into the hot oil in batches. Fry until golden brown, approximately 2-3 minutes per side. Remove and drain on paper towels.
Making the Sauce

Combine Sauce Ingredients
In a saucepan over medium heat, combine honey, Sriracha sauce, soy sauce, rice vinegar, and minced garlic. Stir until well mixed and heated through.

Finalize the Sauce
Bring to a simmer and cook for an additional 3-5 minutes until slightly thickened. Remove from heat and stir in chopped green onions.
Serving

Toss the Shrimp
In a large bowl, toss the hot fried shrimp with the sweet 'n spicy sauce until evenly coated.

Serve immediately, garnished with extra green onions if desired.
