Preparation of Ingredients

    Chop the Vegetables

    Thinly slice the onion and bell pepper. Dice the tomato and set aside. Shred the lettuce if using whole leaves.

    Prepare the Steak

    Trim any excess fat from the sirloin steak and cut it into small cubes, about 1 inch in size.

Cooking

    Cook the Steak

    In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the cubed sirloin steak, season with salt and black pepper, and cook for about 5-7 minutes, or until browned and cooked to your desired doneness. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add another tablespoon of olive oil. Add the sliced onion and bell pepper, and sauté for about 5 minutes until they are soft and slightly caramelized. Remove from heat.

Assembly

    Assemble the Wraps

    Lay a tortilla flat on a clean surface. Spread 1 tablespoon of mayonnaise on the tortilla. Layer with lettuce, sautéed onions and bell pepper, diced tomato, steak cubes, and a slice of Swiss cheese.

    Wrap it Up

    Fold the sides of the tortilla inward and then roll it up tightly from the bottom to the top. Repeat with the remaining tortillas.
