Form the Beef Patties
In a bowl, season the ground beef with salt and pepper. Divide the meat into 4 equal portions and shape them into burger patties.

Cook the Patties
In the same skillet over medium-high heat, add another tablespoon of butter. Cook the burger patties for about 4-5 minutes on each side, or until they reach your desired doneness. In the last minute of cooking, place a slice of American cheese and a slice of pepper jack cheese on each patty, allowing them to melt.

Assemble the Patty Melt
Spread a generous amount of the Comeback sauce on one side of each slice of sourdough bread. Place a cooked patty with melted cheese on one slice, followed by sautéed onions. Top with another slice of bread, sauce side down.

Once golden brown, remove from the skillet, slice in half if desired, and serve warm with extra Comeback sauce on the side.
