Fry the Potatoes
In a deep frying pan or a fryer, heat the vegetable oil over medium-high heat until hot. Carefully add the frozen French fries in batches, making sure not to overcrowd the pan. Fry them for about 5-7 minutes or until they are golden brown and crispy. Use a slotted spoon to remove the fries and place them on a paper towel-lined plate to absorb excess oil. Season with salt and black pepper to taste.

Top the Fries
Once the fries are cooked and seasoned, transfer them to an oven-safe dish. Sprinkle the shredded cheddar cheese evenly over the fries. Add the sliced jalapeños on top of the cheese.

Melt the Cheese
Preheat your oven to 350°F (175°C). Place the dish in the oven and bake for about 5-10 minutes, or until the cheese is melted and bubbly.

Remove the dish from the oven. Drizzle sour cream over the cheese fries and garnish with chopped green onions. Serve immediately while hot.
