Mashed Potatoes

    Prepare the Potatoes

    Peel the Russet potatoes and cut them into quarters. Place the potatoes in a large pot and cover them with water.

    Boil the Potatoes

    Bring the pot of water to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 15-20 minutes, or until the potatoes are fork-tender.

    Drain and Mash

    Drain the potatoes in a colander and return them to the pot. Add the butter, heavy cream, garlic powder, salt, and black pepper.

    Mash Until Smooth

    Using a potato masher or a hand mixer, mash the potatoes until smooth and creamy. Adjust seasoning to taste.

Gravy

    Make the Roux

    In a medium saucepan, melt the butter over medium heat. Once melted, add the all-purpose flour and whisk constantly for about 2-3 minutes until the mixture turns a light golden color.

    Add Broth

    Slowly pour in the chicken or vegetable broth while continuing to whisk. Make sure there are no lumps.

    Season the Gravy

    Add the soy sauce, salt, and black pepper to the gravy. Bring to a gentle simmer and cook for about 5-7 minutes, stirring occasionally, until the gravy thickens.

    Serve

    Once thickened, taste and adjust seasoning if necessary. Serve the gravy warm over the mashed potatoes.
