Chili Preparation

    Cook the Meat

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent. Add the ground beef and cook until browned, breaking it up with a spatula.

    Stir in the canned diced tomatoes, kidney beans, chili powder, cumin, salt, and black pepper. Mix well.

    Simmer the Chili

    Reduce the heat to low, cover the pot, and let it simmer for about 30 minutes, stirring occasionally.

House-made Rotel Preparation

    Mix Ingredients

    In a separate bowl, combine the canned diced tomatoes with green chilies, fresh cilantro, and lime juice. Stir gently to mix.

Assembly

    Serve the Chili

    In bowls, ladle the chili. Top each serving generously with the house-made Rotel, followed by a dollop of sour cream, a handful of sliced jalapeños, and a sprinkle of shredded lettuce.
