Method

Preparation

  1. 1

    Grate the Cheese

Using a cheese grater, grate the cheddar and Monterey Jack cheese into a mixing bowl.

  2. 2

    Mix the Cheese

Combine the grated cheddar and Monterey Jack cheese in the mixing bowl until well blended.

Cooking

  1. 3

    Heat the Pan

Place a non-stick skillet over medium heat and add 1 tablespoon of butter. Allow the butter to melt and coat the pan.

  2. 4

    Assemble the Quesadilla

Place one flour tortilla in the skillet. Evenly spread half of the cheese mixture over the tortilla. Top with the second tortilla.

  3. 5

    Cook the Quesadilla

Cook for about 3-4 minutes or until the bottom tortilla is golden brown and the cheese begins to melt. Carefully flip the quesadilla using a spatula and cook the other side for another 3-4 minutes.

  4. 6

    Remove and Slice

Once both sides are golden and the cheese is fully melted, remove the quesadilla from the skillet and place it on a cutting board. Let it sit for a minute before slicing into wedges.
