Burger Preparation

    Cook the Bacon

    In a skillet over medium heat, cook the hickory smoked bacon until crispy, about 4-5 minutes. Remove and drain on paper towels.

    Form the Patties

    In a mixing bowl, shape the ground beef into two equal patties, about 3/4 inch thick. Season both sides with salt and black pepper.

    Cook the Patties

    In the same skillet used for the bacon, cook the beef patties over medium-high heat for about 3-4 minutes on each side for medium doneness. During the last minute of cooking, place a slice of pepper jack cheese on each patty to melt.

    Toast the Buns

    While the patties are cooking, lightly toast the burger buns in another pan or under the broiler until golden brown.

Comeback Sauce Preparation

    Mix the Sauce

    In a small bowl, combine mayonnaise, ketchup, chili sauce, Worcestershire sauce, hot sauce, garlic powder, onion powder, paprika, salt, and black pepper. Stir until well mixed. Adjust seasoning to taste.

Assembly

    Assemble the Burger

    On the bottom half of each toasted bun, spread a generous amount of Comeback sauce. Layer with lettuce, tomato slices, the cooked burger patty with melted cheese, crispy bacon, red onion slices, and finally, the onion rings. Top with the other half of the bun.
