Method

Chips

  1. 1

    Prepare the Tortillas

Cut each corn tortilla into 6 wedges to create chips.

  2. 2

    Heat the Oil

In a large skillet, heat vegetable oil over medium-high heat until hot.

  3. 3

    Fry the Chips

Fry the tortilla wedges in batches until golden brown and crispy, about 2-3 minutes per batch.

  4. 4

    Drain and Season

Remove chips from oil and place on paper towels to drain excess oil. Sprinkle with salt immediately.

Salsa

  1. 5

    Chop the Vegetables

Dice the fresh tomatoes, onion, and jalapeño pepper, and chop the cilantro.

  2. 6

    Mix the Ingredients

In a bowl, combine chopped tomatoes, onion, cilantro, lime juice, jalapeño, and salt. Stir well.

  3. 7

    Let Rest

Allow the salsa to rest for at least 10 minutes to let the flavors meld together.

Rotel

  1. 8

    Combine Rotel Ingredients

In a saucepan over medium heat, combine the can of diced tomatoes with green chilies and cream cheese.

  2. 9

    Melt the Cheese

Stir continuously until the cream cheese is completely melted and the mixture is smooth.

  3. 10

    Add Cheddar Cheese

Stir in shredded cheddar cheese until melted and well combined, about 2-3 minutes.
