Prepare the Chicken

Season the Chicken
Rub the Cajun seasoning evenly over both sides of the chicken breasts.

Heat the Oil
In a large skillet over medium-high heat, add the olive oil and allow it to heat until shimmering.

Cook the Chicken
Add the seasoned chicken breasts to the skillet and cook for 5-7 minutes on each side, or until the chicken is cooked through and has a blackened crust. The internal temperature should reach 165°F (75°C).

Melt the Cheese
In the last minute of cooking, place a slice of pepper jack cheese on each chicken breast and cover the skillet with a lid to help the cheese melt.

Prepare the Buns
Toast the burger buns lightly on the skillet or in a toaster.

Layer the Ingredients
Spread 2 tablespoons of mayonnaise on the bottom half of each bun. Place a layer of lettuce, followed by the blackened chicken with melted cheese, bacon, and slices of fresh tomato.

Complete the Sandwich
Top with the other half of the bun and press down gently to combine.
