For the Blackened Mahi Mahi

    Prepare the seasoning mix

    In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, dried oregano, salt, and black pepper. Mix well until all spices are incorporated.

    Season the mahi mahi

    Pat the mahi mahi fillets dry with paper towels. Rub both sides of each fillet with the olive oil and then generously coat each side with the seasoning mix.

    Cook the mahi mahi

    Preheat a cast-iron skillet over medium-high heat. Once hot, place the seasoned mahi mahi fillets in the skillet and cook for 3-4 minutes on each side, or until the fish is cooked through and has a blackened crust.

    Slice the zucchini into thick rounds and cut the red and yellow bell peppers into strips.
