Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Season the pork belly with salt and black pepper. In a large, oven-safe pot, heat the olive oil over medium-high heat. Sear the pork belly on all sides until golden brown, about 4-5 minutes per side. Remove the pork belly and set aside.

Make the Braising Sauce
In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent, about 5-7 minutes. Pour in the vodka and scrape the bottom of the pot to deglaze. Add the chicken broth, thyme, bay leaves, and return the pork belly to the pot.

Braise the Pork Belly
Cover the pot with a lid and transfer it to the preheated oven. Braise for 2.5 to 3 hours, or until the pork belly is fork-tender.
