Prepare the Ingredients
Dice the beef tips into small cubes. Rinse and chop the green onions. Open the can of diced tomatoes.

Cook the Beef
In a large skillet over medium heat, add a tablespoon of oil. Once hot, add the diced beef and cook until browned, about 5-7 minutes. Season with salt and pepper to taste.

Make the Spicy Alfredo Sauce
In a saucepan, melt 2 tablespoons of butter over medium heat. Add 1 cup of heavy cream and bring to a simmer. Stir in 1 cup of grated Parmesan cheese, 1 teaspoon of garlic powder, 1 teaspoon of red pepper flakes, and salt to taste. Stir until smooth and thickened, then remove from heat.

Cook the Tortelloni
In a large pot, bring salted water to a boil. Add the cheese-filled tortelloni and cook according to package instructions, typically about 4-5 minutes. Drain and set aside.

Combine Everything
In the skillet with the cooked beef, add the can of diced tomatoes and the prepared spicy Alfredo sauce. Stir well to combine. Add the cooked tortelloni and mix gently to coat.

Serve the beef tortelloni in bowls, topped with crumbled Gorgonzola blue cheese and chopped green onions.
