    Prepare the Ribs

    Preheat your oven to 300°F (150°C). Remove the membrane from the back of the ribs. In a small bowl, mix salt, black pepper, garlic powder, and onion powder. Rub this mixture all over the ribs.

    Bake the Ribs

    Place the ribs on a baking sheet lined with aluminum foil. Cover with another piece of foil and bake for 2.5 to 3 hours, until tender.

    Add BBQ Sauce

    Remove the ribs from the oven and brush with house BBQ sauce. Increase the oven temperature to 400°F (200°C) and bake uncovered for an additional 15-20 minutes, basting with more sauce as needed.

    Prepare the Potatoes

    In a pot, bring 4 cups of water to a boil. Add the salt and the baby potatoes. Boil for about 15-20 minutes until tender. Drain and set aside.

    Sauté the Spinach

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add the fresh spinach and cook until wilted, about 3-4 minutes. Season with salt and black pepper to taste.

    Serve

    Plate the ribs with salt water potatoes and sautéed spinach on the side. Enjoy your meal!
